Chop the onion and put it in a pan. Add the Si'doux, the Genmai Su and the mustard, as well as a pinch of salt. Add apples, rhubarb, mango or chopped shallots according to your own taste, and bring the mixture to the boil. Other vegetables or fruit, such as tomato or chicory (endive) can be used in the chutney as well.
