Gomasio ('goma' is the Japanese word for 'sesame') is a mix of sesame seeds and unrefined sea salt, slightly roasted separately and then ground together. Each small grain of salt is thus covered with the oil of the sesame seeds. A healthy and tasty seasoning with much less sodium than pure salt.
Sesame is said to stimulate intellectual activity and memory... It is in any case certain that, thanks to its high phosphorus, lecithin and unsaturated fat content, it has a beneficial effect on the nervous system.
Calcium needs magnesium in order to be more easily fixed to the bone tissue by our organism. Thanks to the combination of sesame (very rich in calcium) and salt (rich in magnesium), gomasio is a valuable seasoning. Its high antioxidant and vitamin E content protect it against oxidation.
