Mix the apple and lemon juice with the Si'doux and the Agar-Agar powder and bring to the boil. Add the chopped mint leaves and pour the mixture in the moulds. Leave the aspic in the refrigerator for a few hours and remove it from the moulds. Tip from Lima : Serve the aspic on a coulis made of fruit and garnish with mint leaves and lemon peel.
