Seitan is rich in superior quality vegetable proteins (essential amino acids), minerals and trace elements; it contains no cholesterol and very few lipids. Of all the foodstuffs that contain vegetable proteins, seitan is the one with the texture that most closely resembles that of meat.
+ Seitan was developed long ago by Zen monks. To make seitan, the wholewheat proteins (the gluten) are first separated from the bran and the starch. Then, they are kneaded to obtain a dough that is cooked in a soy sauce-based broth, to which several spices are added.
