  1. Bring abundant water (about 4litters) to a boil in a big pot.

  2. Cut the vegetables into stripes, chop garlic & ginger.

  3. Put sesame oil and the chopped garlic & ginger in pan, start heating over low heat until fragrant.

  4. Add vegetables accordingly from the hard ones, add a pinch of salt and place the lid until it gets steamed and cooked.

  5. Boil the Udon for 8-9mins (a little less than the package indication, since you fry in pan later), drain using a strainer, wash under running water, and drain well.

  6. Add the Udon onto the pan with sautéed vegetables, warm over medium heat, add the mixed sauce and cook until the liquid is gone, add white pepper to taste.

  7. Put in a serving dish. You can add relish like leek, coriander, pickled ginger etc.
