Tamari & Shoyu - Fermented soy sauces

The naturally fermented soy sauces Tamari (gluten free) and Shoyu are superior quality products among the decade-old spices. These delicious sauces are used to flavour wok recipes, soups or salades.
The Lima soy sauces are a result of 100% natural and month long soy fermentation (and wheat), according to an ancient recipe. They can therefore not be compared with chemically prepared soy sauces to which sugar and/or colour agent E150 (caramel) are added.

Since 1985, the high-quality soy sauces have been produced in a traditional way by the Japanese family business Sato, in Virginia, this for 7 generations now. The soy beans are guaranteed GMO free and 100% organic. Every delivery, whether it contains raw materials or finished products, is followed up by our supplier and analyzed on GMO, microbiological quality and physical parameters.

In the kitchen

Tamari is a strong flavored soy sauce with a tasteful touch. Compared with Tamari, Shoyu has a more mild gentle flavor (refined taste). Both sources are commonly used in soups, wok recipes, rice, noodles, steamed vegetables, salads, marinades, pickles and with tofu, seitan or tempeh. The Lima soy sauces fit perfectly into a vegan lifestyle.

Less salt

Soy sauces are a great substitute for salt. Thanks to these tasteful seasonings, you don’t lose out on flavor if you use soy sauce instead of salt. Our tip? Add a dash of soy sauce gradually throughout the cooking and taste regularly! You will notice that the natural flavours will come out better.

The product range: Tamari and Shoyu

The common way to produce Tamariat Lima, is with soybeans only, that’s why we can offer a gluten free soy sauce option. This is also the one and only Tamari. However, be aware of some soy sauce products that are positioned in the market as Tamari , it happens often that they still contain a small amount of wheat or barley.

Shoyu is traditionally made of soybeans and wheat. Over 80% of the soy sauces from Japan are Koikuchi Shoyu, which is made of 50% soybeans and 50% wheat. Lima’s Shoyu contains a high amount of soy, compared with other Shoyu products. The 70% soy content makes the product more unique and enhances only the flavor. Smoked Shoyu: an unique tasteful experience! In addition to the regular Shoyu mild and Shoyu Less salt, we also have a smoked reference. The Smoked shoyu has a distinct smoky taste using Japanese cherry wood. An excellent soy sauce, unique in its kind.
