Ume paste
The Ume Paste is made from traditional Japanese Ume plums. The Ume plum (the brine of which is also used to mage the Ume Su vinegar) is grown in Japan and has a strong, slightly acidic taste. These plums undergo a lactic fermentation process of approximately one month in brine with sea salt, infused with Shiso leaves to give the apricot its beautiful red colour. Notably versatile, our Ume Paste can be easily diluted according to your culinary preferences.
