Spicy lentil curry

Ingredients

  • 200g red lentils (dry weight)
  • 2 peppers
  • ½ onion
  • 1 tbsp vegetable oil
  • 200g diced tomatoes
  • 2 tbsp ACETO BALSAMICO DI MODENA
  • 1 tbsp
  • 1 tbsp curry powder
  • Coriander
  • 2 spring onion stems
  • 1 lime

Preparation

  1. Bring a pot of water to the boil and boil the lentils according to the instructions on the packet. Cut the peppers into cubes and finely chop the onion. Braise the peppers and onion in a little oil until the onion looks glazed. Then add the diced tomatoes and balsamic vinegar. Season with salt and pepper, curry powder and YUZU chili.

  2. Leave to simmer on low heat for about 15 minutes. Add the lentils for the last 5 minutes.

  3. Serve the curry onto two plates and finish off with some chopped spring onion, a piece of lime, coriander and Furikake Masala. Perfect comfort food for a delicious late summer meal!
