Summer salad with grilled mango

Ingrédients

  • 100 gr mixed lettuce
  • 2 mangoes (or 4 nectarines)
  • 16-20 spicy falafel balls
  • 50 gr
  • 50 ml water
  • 3/4 tsp paprika
  • 3/4 tsp Provencal herbs
  • Pepper & salt
  • Pinch of garlic and onion powder

Préparation

  1. First we make the couscous cisps: Cook the couscous according to the instructions on the package. Add 50ml water to the cooked couscous, along with the spices. Stir this well .

  2. Take a sheet of baking paper and put the couscous mixture on it. Place another baking sheet above and roll it out well with a rolling pin. Remove the top baking paper and put in the oven for +/- 30 minutes.

  3. Peel the mango (or nectarines) and cut into pieces. Grill these briefly on a grill pan. Don’t make the pieces too small. Meanwhile, fry the falafel balls according to the instructions.

  4. Wash the mixed lettuce. Divide this among the plates, along with the falafel & mango pieces. Finish with shreds of the couscous crisps & the tamari vinaigrette Provençale.
