Summer salad with grilled mango

Ingrédients
- 100 gr mixed lettuce
- 2 mangoes (or 4 nectarines)
- 16-20 spicy falafel balls
- 50 gr
- 50 ml water
- 3/4 tsp paprika
- 3/4 tsp Provencal herbs
- Pepper & salt
- Pinch of garlic and onion powder
Préparation
First we make the couscous cisps: Cook the couscous according to the instructions on the package. Add 50ml water to the cooked couscous, along with the spices. Stir this well .
Take a sheet of baking paper and put the couscous mixture on it. Place another baking sheet above and roll it out well with a rolling pin. Remove the top baking paper and put in the oven for +/- 30 minutes.
Peel the mango (or nectarines) and cut into pieces. Grill these briefly on a grill pan. Don’t make the pieces too small. Meanwhile, fry the falafel balls according to the instructions.
Wash the mixed lettuce. Divide this among the plates, along with the falafel & mango pieces. Finish with shreds of the couscous crisps & the tamari vinaigrette Provençale.
