Cold Noodle Salad

- 250 g UDON (TRADITIONELE DEEGWAREN UIT VOLKORENTARWE) noodles
- a handful of salted peanuts
- 2 spring onions
- a handful of fresh coriander
- 1/4 cucumber
- 6 tbsp
Bereiding
Cook the noodles as directed on the package. Drain and rinse under ice-cold water for about two minutes. Let them drain.
If necessary, shortly fry the peanuts in a fat-free pan and chop them.
Cut the spring onion into fine rings and half the cucumber into small cubes.
Cut the remaining cucumber into strings with a vegetable peeler.
Mix the sesame sauce with the noodles and serve with the peanuts, spring onions, cucumber and coriander.
